Bitter Greens with Vermont Maple Vinaigrette

Bitter greens are a phenomenal addition to any diet as they stimulate bile production and enhance the efficacy of your digestion. Yet most people find them difficult to enjoy because they’re, well, bitter. The sweetness of this dressing pairs perfectly with the bitterness of the greens and will leave you wanting more.

For the Salad

1 bunch red kale, chopped
1 bunch dandelion leaves, chopped
5 radishes, sliced thinly

Vermont Maple Vinaigrette

¼ cup apple cider vinegar
¼ cup real maple syrup
1 heaped tbsp Dijon mustard
1 clove garlic, minced
1 small shallot, minced
¾ cup extra virgin olive oil
Salt and pepper

Place all ingredients in a mason jar and shake to combine. Dress salad to your liking.
