Crispy Cauliflower with Goat Cheese

If you were stuck on a desert island and could only bring one vegetable, what would you bring? I vote cauliflower. Seems odd, but trust me after you eat this crispy cauliflower dish you might just agree with me.

1 head cauliflower, cut into florets
Extra virgin olive oil
1 tsp garlic powder
Salt and pepper
3 oz goat cheese

Preheat oven to 415F

In a large bowl toss cauliflower with olive oil, garlic powder, salt and pepper. Transfer to a large baking sheet, making sure to not crowd the cauliflower or it will not crisp. Roast in the oven for 45 minutes or until it begins to brown and crisp, flipping midway. Remove cauliflower from the oven and add goat cheese crumbles. Return to the oven until cheese has melted, approximately 5 minutes.
