Katie’s Favorite Coleslaw

This coleslaw converts even the staunchest of coleslaw haters. It’s fresh and crunchy and bursting with flavors from the fresh herbs. Serve this at your next barbeque and watch coleslaw go from the lame side dish to the star of the show!

1 head red cabbage, chopped
1 medium red onion, chopped
1 bunch carrots, chopped
6 stalks celery, chopped
5 dill pickle spears, chopped
1 bunch fresh herbs: dill, mint, tarragon, chives, parsley, or basil all pair well
3 Tbsp dill pickle juice
1 cup avocado or extra virgin olive oil-based mayonnaise
2 tbsp real maple syrup
Salt and pepper to taste

Combine all vegetables in a large bowl. Add wet ingredients and incorporate into the vegetables, season liberally with salt and pepper.
